FROM THE HARVEST TO ORGANIC OLIVE OIL In the crop-growing area of the picturesque island of Brač, a centuries old tradition of olive cultivation flourishes. A special highlight is the widespread olive variety Oblica, which has adapted perfectly to the special climatic conditions over time. The olives of this unique variety form the basis for the organically produced olive oil of the renowned Hotel Lemongarden, which is known far beyond the island’s borders for its individual aroma and outstanding quality. In the production of the olive oil every detail is considered with the utmost care to ensure a final product of the highest quality. The tried and tested decanter method is used which allows the oil to be extracted gently and without the use of heat. Here the olive pulp goes through a process of crushing and mixing called malaxation. The oil is then separated from the remaining components in special decanter machines to achieve the highest possible quality. The temperature must not exceed 27 degrees Celsius in this process in order for the oil to be called “cold pressed” or “cold extracted”. Chemical additives are, of course, strictly prohibited. After the separation process the oil is centrifuged and any turbid matter is removed in a final filtering process. An alternative method is the natural filtering of the oil in special steel tanks for several weeks or months which allows the turbid matter to settle to the bottom and to further refine the oil. Here each stage of the production process is carried out with the utmost precision to guarantee an OLIVE FESTIVAL A unique experience for all lovers of olives is the hotel’s Olive Festival which takes place during the harvest in the last two weeks of October. Guests can actively participate in the harvest as well as in workshops to learn more about traditional olive tasting of different types of olive oil.
